Application
Pepsin is a peptidase used to digest proteins and is commonly used in the preparation of Fab fragments from antibodies. Pepsin, from porcine gastric mucosa, has been used to hydrolyze dry cervical samples in mice.
It has been used to simulate in vitro gastric digestion of cocoa mass and supplemented dietary fiber. It has also been used to increase the fraction of extractable soluble collagen and to lower the immunogenicity of the resulting collagen from bovine dermal tissue.
کاربرد
پپسین یک پپتیداز است که برای هضم پروتئین‌ها استفاده می‌شود و معمولاً در تهیه قطعات Fab از آنتی‌بادی‌ها کاربرد دارد. پپسین، از مخاط معده خوک، برای هیدرولیز نمونه‌های خشک دهانه رحم در موش‌ها استفاده شده است. از آن برای شبیه‌سازی هضم معده‌ای توده کاکائو و فیبر غذایی مکمل‌شده در شرایط آزمایشگاهی استفاده شده است. همچنین برای افزایش کسر کلاژن محلول قابل استخراج و کاهش ایمنی‌زایی کلاژن حاصل از بافت پوست گاو به کار رفته است.
