Description
Meat extract is prepared from selected animal tissues that are free from fat and sinew. It is digested by weak proteolysis with pancreatin (porcine origin) before being extracted. In culture media, meat extract is usually employed in concentrations of 0.3 to 1.0%.
Application
Meat Extract is used as a nutritive substrate in microbial culture media. It is particularly suitable for cultivating lactic acid bacteria.

عصاره گوشت از بافت‌های حیوانی منتخب که فاقد چربی و زردپی هستند تهیه می‌شود. قبل از استخراج، با پروتئولیز ضعیف با پانکراتین (با منشاء خوکی) هضم می‌شود. در محیط‌های کشت، عصاره گوشت معمولاً در غلظت‌های 0.3 تا 1.0 درصد استفاده می‌شود.
کاربرد
عصاره گوشت به عنوان یک سوبسترای مغذی در محیط‌های کشت میکروبی استفاده می‌شود. این ماده به ویژه برای کشت باکتری‌های اسید لاکتیک مناسب است.
